Vegetable Beef Stew In A Slow Cooker
This Vegetable Beef Stew is basic but it packs a nice bite. It tastes really good, it fills you up and it’s great for cold winter days.
Ingredients:
1lb Stew Meat
1 (14oz) can Beef Broth
1 (28oz) can Stewed Tomatoes (regular – no added spices)
2 (15oz) cans of mixed vegetables (keep the liquid)
1/2 cup Barley
Optional – 2 cans Sliced Potatoes (drained)
Instructions:
Throw all ingredients into the slow cooker (except potatoes if you’re using them – if so, put them in during the last 1/2 hour or so to get them heated up), turn it on low for 7-9 hours. You can sear the meat first before putting into the slow cooker but it will cook while in the slow cooker too.
Yes, like I said, this Vegetable Beef Stew is very basic but it does it’s job! You can add carrots as well to make it even more filling
