Whenever I make these mini cheesecakes and bring them to parties, potlucks or other get-togethers, they disappear in minutes! They’re delicious and now I’m sharing the recipe with you!
Ingredients:
- 2 – 8oz Cream Cheese
- 3/4 Cups Sugar
- 2 Eggs
- 1 Tbs Lemon Juice
- 1 tsp Vanilla
- 18 Vanilla Wafers
- 21oz can Cherry Pie Filling (or Blueberry!)
Instructions:
Preheat oven to 375
Soften Cream Cheese in the microwave for ~15 seconds
Using a mixer, mix the cream cheese, sugar, lemon juice and vanilla until smooth and creamy
Add 1 egg at a time and mix until incorporated
Line cupcake tins with cupcake holders and add 1 vanilla wafer to the bottom of each one
Spoon the cream cheese batter into the cupcake holders until 2/3 full
Spoon the cherry or blueberry filling on top of each cake
Bake at 375 for 15 minutes
Allow cheesecakes to cool before trying to remove them from the cupcake holders.
Refrigerate for at least an hour before serving.
These mini cheesecakes are sure to make your family and friends excited whenever you tell them you’re going to be making them!
