This is a twist on the classic meatloaf recipe. Two things that set this apart from your moms meatloaf: This one is stuffed with Cheddar Cheese AND it’s made in your slow cooker – that’s pretty awesome, if you ask me! Enjoy this Cheddar Stuffed Meatloaf recipe, today!
Ingredients:
- 1 1/2 lbs. Lean Ground Beef
- 2 Eggs – Beaten
- 2 cups Soft Bread Crumbs
- 1 cup Ketchup
- 1/2 cup Chopped Yellow Onion
- 8 Slices Cheddar Cheese (cut into 16 equal sized strips)
- 2 Tbs Tomato Paste
- 1 Tsp. Salt and Black Pepper
Directions:
Set aside the cheese and tomato paste
Combine remaining ingredients in a large bowl
Shape the meat into a loaf and cut long ways down the center
Remove the top half of the meatloaf and place 8 strips of cheese over the bottom half
Place the top half of the meatloaf back onto the bottom half and press the edges together to seal
Place the Cheddar Stuffed Meatloaf into the slow cooker and spread the tomato paste over the top of the meatloaf
Place the remaining 8 strips of cheese over the top of the tomato paste
Cover and cook on high for 3-4 hours or on low for 6-8 hours
Serves 6
